Winter Bread

I like baking bread. Punching the dough is fun and relaxing. It's also nice to try different things and see how they turn out. Most of the time it's a success, or at least still edible. This time, we baked a whole-grain bread with seeds and dried fruit.
  • 4 cups of whole-grain flour
  • 1 cup of oats
  • 1 pack of dried yeast
  • salt
  • 4 tbsp of flax seeds
  • 4 tbsp of sunflower seeds
  • 4 tbsp of pumpkin seeds
  • 4 tbsp of raisins
  • 10 dried figs
  • lukewarm water
This one is easy. Throw everything dry in the mixer bucket and mixed with the hook fixture. Add lukewarm water slowly until it all comes together, then knead some more by hand until the dough softens. It took 1 hour to rise, then I punched it down and rolled two loafs. It took another 30 minutes for the loafs to rise again. I baked these in these tinfoil pound-cake disposable pans you get at the supermarket.

It's a very tasty and strong-flavored bread, quite filling. I had a slice or two for breakfast, no need for butter or jam with this one.
